Super Bowl Sundae

Do ya'll follow The World According To Eggface? I learned about her blog at my first WLS support group meeting. One of the doctor's mentioned that the blog featured amazing protein shake recipes.I love checking in on the blog weekly.

I love that she has millions of recipes for snacks that would normally be shunned, like donuts  and ice cream.

Lately I've been craving chocolate and/or ice cream something fierce. The other day I grabbed one of those tiny Hershey's Dark Chocolate bars at work. No big deal right? It's smaller than my pinky finger. 40 calories. When I'm eating 800 calories a day, 40 calories is too much. Especially for something that offers me about 30 seconds of enjoyment. So I decided to give the protein ice cream a whirl.

I whisked 2 cups of Hood Chocolate Milk with 4 scoops of Body Fortress Chocolate Peanut Butter and threw it in my ice cream maker.We took a few extra large spoonfuls to taste test just now and it was great.

I can't wait to have some later. I'm going to top it with a bit of whip cream later and have a little sundae. When I get a chance to go to the store I'll try some of eggface's ice cream recipes because they all sound delish.

Missing Diet Coke

Definitely sad about swearing off diet coke for good, but it's probably a really good thing.
Wanted to recommend a substitute in case anyone else out there wants the taste once in a while.

The Sodastream is another one of those halfway cool kitchen gadgets you really don't need. The actual machine carbonates a bottle of tap water and then you mix in one of their concentrates to make a much cheaper version of your fav.

Since carbonation could be a cause of erosion, steer clear of the CO2 and just use the concentrate. The taste is just OK. It's like drinking a flat Coke. But if you're really wanting the flavor, mix your favorite with water and serve it over ice.

The Diet Coke is the only one I've tried and it is a good imposter. It's probably full of all the nasty chemicals that the real stuff has. But once in a while it's a decent treat.

Sauteed Mushrooms - My Lighter Version

A few days ago I posted a blog about how shocked I was by the calories I added to my sauteed mushrooms with olive oil. I know that olive oil has wonderful health benefits, but I make this recipe so much that I wanted to lighten it up.

From the suggestion of Julia Nelson, I decided to sub out the oil for a tiny bit of broth. I am in love with the flavor of the mushrooms tonight, and I cut the calories from 200 per serving to a measly 23.

I've had these broth concentrate packets in my pantry for a while so I gave them a whirl.

Here's the recipe for 2 servings:

2 handfuls of sliced Mushrooms
1 packet of broth concentrate
1 tablespoon of water
2 teaspoons of Worcestshire
2 teaspoons of Dijon Mustard
Dried Parsley
Garlic Powder
Ceyenne

Put concentrate and water into a hot frying pan and wisk together. Let it get very hot and bubbly. Throw in the mushrooms and toss to coat. All the mushrooms to sautee for a few minutes and add dry seasonings. Continue to toss the mushrooms to mix in the seasoning. When the mushrooms are just about done, add in the worcestshire and dijon and toss until the mustard mixes in and coats all of the mushrooms.

Serve immediately.

I love some Trader Joe's Turkey Burgers as well. Here are the mushrooms along with 1/2 of a Turkey Burger and a slice of swiss cheese. Definitely one of my favorite meals for only 220 Calories and 18 grams of protein.

Another Goodie From Pinterest

Today's Menu

Breakfast
Vanilla Bean Torte Protein mixed with 2% milk and ice


Lunch
Buffalo Chicken Wrap
2 oz of store bought rotisserie chicken
1 wedge of Laughing Cow Light Blue Cheese
1/2 Tumaro Low Carb Multi Grain Tortilla
Less than a tablespoon of Frank's Buffalo Sauce

I put it in the toaster oven at work and melted the cheese. 3 of the guys I work with came in my office while I was eating and were staring at it asking about it. It was like there was a set of boobs sitting on my desk or something.

Snack
My lunch was super low in calories, but I ended up getting pretty hungry around 2:00 so I have a Pantry Selections Protein Pudding for a snack. I got it from mybariatricpantry.com. I like it because I can mix it with 4 oz of water in my little blender cup and it has a really nice pudding texture. However, I've had 3 of these so far, Vanilla, Tropical Banana and California Strawberry. Vanilla was great but the other two were ehhh.


Dinner
I skipped dinner tonight because I'm feeling icky, but here is what MS ate. The enchiladas were made with inspiration from a pinterest recipe. But I actually cut each tortilla in half before I rolled them to cut down the serving size. Once I put the sauce on, each enchilada was about 3 oz or a little more. I'm going to freeze these and I think they will be fab with a little spinach salad for lunches.

The recipe made way too much sauce, so I threw in some random ingredients in the left overs and made a corn and ham chowder with it.  MS had 1 enchilada and an ounce of the chowder. Happy Hubby. He's probably already burned off all of the calories he ate from watching American Idol ;)

Blogger's Block

How is everyone doing out there?! I am beat! Monday marked 6 weeks of being banded, which also means we are now free to do whatever workout we can. No more restrictions on the core, the stitches around our ports should be healed up nicely! I've been working out twice a day so I can post a big number on the scale this week.

I'm teetering on the -40lb mark and It's driving me crazy.  My motivation is the fact that right now I have about 20 pairs of size 22 jeans in my closet, some never worn still with tags. I just don't fit in them yet. grrr.

My size 24's (the size I started with) are getting embarrassingly big. I refuse to buy anything other than a smaller size but I'm just not there yet! DANG IT! 

Meanwhile, in man-land, I can hear the weight falling off of MS. Ha! He's going to be down 60 lbs before I drop a size in pants! But I still love him :)
