Little Bundles of Joy

I'm not talking about babies, people. These little lasagnas (inspired by pinterest) were so delicious.  I could eat a whole pan of lasagna if left alone. The portion control by using a muffin tin allowed me to only make enough for dinner tonight and tomorrow's lunches

Here's what you need:

- Won Ton wrappers
- Red Sauce
- 1 or 2 Meatballs, sliced -OR- any cooked ground meat/soy product
- Sliced Mozzarella
- Ricotta (Kraft Simply is the closest thing I've found to fresh - use fresh if you have access to it. Or you can use my sister's recipe found here)


Spray a muffin tin with cooking spray and stack in the following order:
1 wonton wrapper
Tiny dollop of ricotta
2 meatball slices
teaspoon of sauce
1/2 slice of mozzarella (cut the slices into quarters they fit perfectly)
Repeat

Bake at 375 for 20 minutes.

Each of mine were a little over 3 oz. 179 cals and 13 proteins. Leaves just enough room for a little spinach salad! Yum!!!

    1. These are cool for you too because the kids and hubby can have 2 or 3 of the cups with a salad and be happy. You don't have to make something different for yourself.

      I still have lots of won ton wrappers left over so this week I'm also going to make pizza cups with those mini Turkey pepperonis and taco cups with ground turkey, salsa, sour cream and jalepenos.
