Crab Cakes!

Gullah Gourmet is this wonderful little place that I found through Groupon. If you've ever been to Charleston South Carolina, you've probably seen their products. They make all kinds of low country food mixes and package them in the sweetest hand sewn cotton bags. Everything we have purchased there and fixed has been delicious.

Tonight I used the He Crab Cake mix to make dinner. Normally I would have also made their She crab soup and served them together, but given our current condition.. ha!

I know you're probably thinking that this doesn't sound like diet food, but I actually doubled the crab meat and portioned each cake out into 2 oz servings. 2 crab cakes made a perfect 4 oz serving and had 23 grams of protein!

Full Can of Chicken of the Sea Crab Claw Meat (16oz)
1/2 cup water
2 tablespoons Fage 2% greek yogurt
1 packages of Gullah Gourmet He Crab Cake Mix (or whatever mix you want)

gently fold all of the ingredients together, and make small cakes that are 2 oz a piece. (use a 2 oz cookie scoop, or 1/4 cup measuring cup)  form into patties and brown in a pan or bake in the oven.

I made a remoulade sauce and used greek yogurt as the base instead of mayo. It was a perfect compliment. I honestly can't even remember what i put in it or else I'd list that too!

  1. I'm so glad you posted this recipe because, while I've always wanted to try crab cakes, the mere thought of mayo nauseates me. Can't stand the stuff. Glad to know that Greek yogurt is a good alternative. Thanks, ma'am!

  2. I love your creativity...the combos are so exciting and NO they don't follow the "traditional" blah blah blah diet food...your ingenuity on making real food good for us is awesome!!! Not a seafood fan but they look very good!!! And all of the fun sites you find and recommend is so helpful and fun!!! I am however dieing to get to my mushy, kinda crunchy stage to try those faux nachos!!! They sound so yummy!!! Until then I shall continue to collect your enthusiasm and be inspired to my own creations!!! FYI your tip on freezing left over soups and soft foods in ice trays has been an amazing pre portioned food and life saver!!! I made purred split pea soup and froze the rest in ice trays 1oz each cube...I was so excited I told my husband when he got home how I froze pea soup in ice trays isn't that cool?? He gave a very disturbed look and said you did what? I repeated in the same excited tone took them out and showed him the tray...he said, " your going to eat those?" because I have to be honest with you Babe I am willing to try anything you make, you know that, but frozen pea soup pops I cannot do"!!! I died laughing and then explained how it worked...He was relieved to know I was not going to make him try frozen pea soup pops!!! Silly silly man, he had a hard day and I had been eating a sugar free pop so I'll excuse him this time!!!

Can't wait to try these and also did some browsing of their other products; I usually use a Louisiana-type shrimp boil for family get-togethers, but I got a bag of the Gullah shrimp boil and also the peach cobbler: getting ready for the big get together in Galveston this summer.

  4. @jackie - let me know what you think! You can also add chopped up shrimp or flaked white fish instead of crab. I'm really starting to get into this whole greek yogurt thing!
    @bandedwithfavor - Yay for ice cube trays! ha! I'm going to have to try a million different ways to contol portions. I am such an over eater, and as I start feeling better, those little tricks help keep me from grabbing a little extra. How are you feeling and progressing?
    @Chris & Sandy - Did you see the section on the Gullah Gourmet Website about how they hand make their items in Charleston. That's what made me want to share!
